We Speak Fluent Tomato
There are more than 80 different types of tomatoes around the world and not every tomato is the same. Each one serves a purpose and we’ve learned that using a combination of different tomatoes produces our desired flavor, freshness, and texture. With over 70% of our salsas made up from tomatoes, it becomes crucial that we know a thing or two about tomatoes.

We start by selecting plum and Roma tomatoes that are ripe on the vine and picked RED when tomatoes are supposed to be picked; from late June through July. Even better, our tomatoes go from the field to diced in less than four hours. These big-sweet, big-acid tomatoes are known for their chewy flesh and low water content which gives them a more concentrated flavor. When you try our salsas, you’ll taste big, sweet flavor.

We source fresh chile peppers, fresh onions and natural spices to produce quality that you can taste. We are NOT using genetically crossbred jalapeno peppers like a certain company we know!
The only water you’ll find is the beer next to it.
“Cut it thin to win” is why many salsa companies add water. The thinner the salsa, the higher the yield and that translates into more $$. Salsa adds flavor to other foods, so what’s the point if it’s watered down?

Small-Batch Deliciousness
Homemade character is maintained by producing our salsas in small-batch stainless steel kettles. In simple terms, you end up eating a salsa that isn’t mushy.
Homestyle vs Restaurant Style
Our unique proprietary methods allow us to make chucky salsas (aka: Homestyle) similar to how you would dice your veggies at home OR we can fine cut our veggies to create the perfect smooth-textured salsa that we first coined the name Restaurant Style back in 2008.
Roasted Rich Flavor
We use a custom-built, stainless steel roasting machine to roast our chile peppers, onions and Fresh Roma tomatoes over an open flame to reach the perfect desired char. Essentially this caramelizes the vegetables to bring out a mouth-watering rich flavor.
Personally Taste-Tested Every Batch
Since 1997, the owners have been taste-testing every batch. We recognize that all natural, fresh ingredients can vary from crop to crop that require subtle adjustments. For example, chile peppers can vary in heat since we don’t use liquid capsicum or genetically modified chile peppers. Thus, we have to make adjustments the old fashion way; by adding or subtracting the quantity of peppers. But if you really want to know why we keep our eye on the prize, we do it for the same reason every chef, cook and Mom tastes their food when preparing it for other people: We want you to have the best we can make!
