STREET CORN LOADED NACHOS

Ingredients

- 10 oz bag tortilla chips
- 1 cup black beans, rinsed and drained
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 1 cup Texas Texas Street Corn
- 1/2 cup diced red bell pepper
- 1/4 cup sliced jalapeños
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- 1/4 cup cotija cheese, crumbled
- Lime wedges, for serving
- Optional: sour cream or crema for drizzling

Directions

Preheat oven to 375 degree F

Spread tortilla chips evenly on a large, oven-safe baking sheet or platter.

Sprinkle black beans evenly over the chips.

Bake for 8—10 minutes, or until cheese is melted and bubbly.

Remove from oven and spoon Texas Texas Street Corn evenly over the nachos.

Top with red bell pepper, jalapeños, red onion, and cilantro.

Sprinkle with cotija cheese and drizzle with sour cream or crema if desired.
