STREET CORN STUFFED AVOCADOS

Creamy avocado halves loaded with Texas Texas Street Corn, fresh vegetables, and cotija cheese. Perfect as a light lunch, appetizer, or summer side dish.
Ingredients

- 2 ripe avocados, halved and pitted
- 1 cup Texas Texas Street Corn
- 1/2 cup cooked shredded chicken (optional)
- 1/4 cup cotija cheese, crumbled
- 2 tbsp cilantro, chopped
- 1 tbsp lime juice
- 1 jalapeno, finely diced (optional)
- Lime wedges, for serving

Cut the avocados in half and remove the pits.

Scoop out a small amount of avocado from the center of each half to create additional room for filling.

In a bowl, combine the Street Corn Salsa, shredded chicken, lime juice, cilantro, and jalapeöo.

Spoon the mixture evenly into each avocado half.

Top with cotija cheese and additional cilantro.

For a vegetarian version, skip the chicken and add black beans for extra protein.
